Does anyone know how to add a "Sleep" button to the login window?
There is already a "Restart" and "Shutdown" button, but sometimes I
would like to put the computer to sleep instead.

What model machine? On my slot-loading iMac I put the machine to sleep by briefly pressing the power button.

Mac OS X 10.3 Panther has such a button on the login window.

You can also hit the powerbutton in that window, or cmd-eject to bring up an options dialog.
